CSA: Week 1 Recap

Well we made it through our first CSA week and all we have left is a bag of spinach!  We got a full box because we wanted to be able to preserve some but that's difficult this early in the season when you get so many leafy greens!  Here was what we got again:


And here are some of the meals that we made:

My first quiche.  It was AMAZING!  A new fave for sure.

incorporated a full bag of spinach along with a bag of salad greens and one bunch of radishes.

Fried eggs over salad greens.  The yolks act as dressing.  Delish!

I wasn't as good as I wanted to be about snapping photos of all of the meals.  We also had braised greens with chicken thighs one night {recipe} and a venison rump roast with sauteed greens.  The green onions we got were two HUGE bunches.  I put some in a couple of salads and they would have been great in the quiche but I didn't think about adding them until after I made it.  When they started to wilt we just took some kitchen scissors and cut them into a freezer bag and tossed them into the freezer.  We also made our usual weekly kale chips.  I think that covers it.  It was a challenge but I enjoyed a reason to spice up our meal plan.

I picked up our 2nd box on Saturday and will start digging into it tomorrow:


Looks like a lot more of the same this week but starting next week we should start seeing more variety.  Luckily salads are super easy to throw together.  I'm going to explore more homemade salad dressings to spice things up a bit.

  1. The best salad dressing is: 1 T. Apple cider vinegar, 2. T OLIVE oil, 1 T fresh lime juice, 1 tsp, minced garlic, 1 tsp. Italian seasoning, 1 tsp. Onion and garlic powder, dried cilantro and salt pepper to taste. I am impressed with the amount of veggie you eat. We are lucky if we get a few carrot sticks. We eat lots of homemade bread with wheat we grind ourselves. Just had the best Philly cheesesteak and cheese hogie tonight, but no veggies hardly ever.

    1. That dressing sounds delish! Can't wait to try it. We have slowly worked towards being the veggie eaters we are today. Since we eat seasonally, we don't eat as much in Winter. It feels good to be doing it again!
