Eat the Rainbow

Sometimes nutrition and making sure you get all of the vitamins and minerals you need in a day can be overwhelming. There was a short period in my life when I would count calories and daily value percentages in an effort to get all of the nutrients that I needed. It was exhausting!  That's when I heard a nutritionist on TV say to eat the rainbow everyday. According to her, the nutrient make up in a food will determine the color and if you eat a full spectrum of color (including white) everyday, you should be able to avoid any deficiencies. Most days we do well with this, especially in the Summer months when colorful fresh fruits and veggies abound, and others we get stuck in a rut and find ourselves eating the same ol' stuff again and again.  This week, I am making a point to eat the rainbow everyday and to spice up our snacks!  Ayden and I ate a rainbow for our late morning snack today!


Guacamole is one of those things that most people bring home from the store but it really is so easy to make!  Here is how I like to make it:

Ingredients:
2 Avocados
1 jalapeƱo (seeded and diced)
1/4 red onion (diced)
Cilantro (to taste, chopped)
A squeeze of lime juice
Cherry Tomatoes (to taste, quartered)
Salt, onion powder, garlic powder (to taste)

Directions:
Spoon avocado into a bowl and mash with a fork. 
Add everything else. 
Mix. 
Serve with pepper sticks, carrots, tortillas chips. Or you could be like Ayden and eat that goodness right out of the bowl with a spoon!  He's kind of a guac monster. 


A serving size of avocado is about 1/4-1/2 of the fruit.  There are so many health benefits from avocado so this treat really hits the mark in my book!
